Yunnan cuisine (云南菜; pinyin: yúnnán cài) is an amalgam of Han and Chinese minority cuisines. As the province with the largest number of ethnic minorities, Yunnan has a great variety of food, and it is difficult to make generalisations. It could be argued, however, that Yunnanese food is quite spicy (as compared to Sichuan cuisine) and makes greater use of mushrooms than other Chinese cuisines.
Famous dishes of Yunnan include:
boluo fan 菠萝饭 (Pineapple rice, found in Xishuangbanna and possibly other Dai areas) 
guo qiao mi xian 过桥米线 ('Crossing the bridge' or 'Across the bridge' noodles, found across the province)
pu'er cha 普洱茶 (Pu'er tea, traditionally grown in Simao)
shiping doufu 石屏豆腐 (Shiping tofu)
erkuai饵块(highly refined and compressed rice cakesErkuai)
rubing乳并(goat milk cheese, from Bai cusine in the area near Dali)
