
Most Chinese make crescent-shaped dumplings. After folding the wrapper, made from dough, in half, they kne
ad its semicircle edge evenly with the thumbs and index fingers of their right hands. The process is called "niefu,” which means kneading for luck. Some rural families knead the two tips of each dumpling together. The ingot-shaped dumplings on round vat lids indicate the house is filled with gold and silver. Some farmers' households make dumplings with wheat-head patterns to pray for a bumper harvest in the coming year. Some others prepare the food in several shapes to foreshadow an affluent and happy life.
